What dishes do you remember from your childhood?
From my very early days before I became vegetarian I remember eating liver and bacon, spaghetti carbonara and steak and kidney pies. After I became vegetarian it was all about cheese: cauliflower cheese, macaroni cheese, cheese on toast. Even those molten cheese Findus crispy pancakes.
As my mum became veggie shortly after I did I also remember her cooking lots of new dishes: curries, dhals, Italian and Mexican dishes, all sorts. We definitely ate more variety of foods once we stopped eating meat.
However, the dishes that really stick in my mind are the puddings and cakes. The teddy bear cake made from Swiss roll that my mum made me for my birthday, banana custard, sherry soaked Christmas trifle, lemon meringue pie, chocolate chip cookies, baked apples stuffed with sultanas, gooseberry cobblers and fairy cakes.
So today is a little trip down memory lane to one of those puddings that I have never had as an adult, apple snow.
I remember apple snow as being a bowl of fluffiness, little pillows of appley snow drifts. It was smooth, silky and melt in your mouth.
The reason I have never had it as an adult is that one of the main ingredients is egg white. Since becoming vegan it never occurred to me to try to recreate a dish that was so egg white based.
That was until I heard about the wonders of aquafaba.
Aquafaba, for those who don’t know, is the liquid from canned chickpeas. That’s right, the water you usually drain down the sink. There is something about the composition of the water that makes it work as an egg white replacer. It has been used very successfully to make meringues and there is even a whole Facebook group dedicated to experiments using it. I made meringues a few month back just to see if it worked, and it did!
So I thought I’d use aquafaba to make a vegan apple snow. The aquafaba whisks into soft peaks and holds the peaks even after folding in the cooked apple. It has the same silky mouthful feel that I remember, is as light as snow and is rather good.
I hope you enjoy it, such a simple dish that tastes anything but.
Vegan Apple Snow
Vegan, dairy free, nut free. Serves 2
For the apple:
- 1 large Bramley apple, peeled, cored and diced
- 1 tbsp sugar
- 2 tbsp water
For the snow:
- 1/4 cup of aqua faba (chickpea water)
- 2 tbsp caster sugar
- 1 tsp vanilla extract
For the apple:
- Place all apple ingredients into a small saucepan and bring to the boil
- Turn down to a simmer on a low heat
- Stir every now and then until the apple is light and fluffy
- Some small chunks are okay but you want it as fluffy as possible
- Let the apple cool completely
For the snow:
- Place the aqua faba in a large bowl and whisk until soft peaks form
- Add caster sugar and vanilla extract and whisk some more
- Gently fold the apple into the snow, being careful not to knock any air out.
